Double beans, also called ‘Lima’ or ‘Butter’ beans because of their starchy yet buttery texture, have a delicate flavour that compliments a wide variety of dishes. They are flat round beans that are light green in colour.

Double Beans or Lima Beans are a rich source of protein, phospohorous, Iron, dietary fiber and other nutrients. They help lower heart attack risk, stabilizes blood sugar and are a source of energy production.

Storage And Uses
Store unwashed fresh beans in a perforated plastic bag and refrigerate. Whole beans stored this way will stay for a week. Beans can also be frozen. They have the ability to retain valuable amounts of nutrients for 3-6 months after freezing.
They are used in curries, soups, stir-fry with rice, noodles and salads. Mix pureed lima/double beans with chopped garlic and your favorite set of fresh herbs. Use this spread as a sandwich filling or a dip. The heartiness of lima beans make them a great soup bean, especially root vegetable soups such as carrots, turnips, beets,etc.
